If you are like me, you may often find yourself looking for something quick and easy to make on a busy weeknight that is nutritious, but also has to taste really good to get everyone on board. These Summer Vegetarian Tacos with Avocado Cream will fit the bill nicely, while getting your family to “eat the rainbow” of colorful vegetables. If you are a meat eater and feeling a little adventurous this is a great meal to start with, since everyone loves a taco! Since this dish is light in protein feel free to add black or garbanzo beans (chick peas) or serve alongside a small bowl of refried black beans to round out the meal. I like to make my refried beans from scratch but if time isn’t on your side you may sub in organic canned black beans.

If you can’t imagine a meal without meat you could add shredded chicken, ground turkey breast or locally caught fish (cod, haddock, sea bass) I would have totally made these for dinner tonight but since its my Birthday I deserve to have someone cook for me and am dining out. I promise it will be a healthy choice but remember you gotta live a little. You can have “your cake and eat it too” especially on your special day!
